The Grain Foods Foundation (GFF) has released a new study, "Consumer Perspectives on Bread," which indicates a significant evolution in how Americans choose their bread products. While traditional sliced bread continues to hold a strong position in households, the research highlights a growing trend towards diversification, with consumers increasingly influenced by nutritional information and ingredient composition. Artisan and sourdough varieties are seeing a notable rise in popularity, with sourdough emerging as a preferred choice for sandwiches.
The study, conducted in partnership with IPSOS and surveying 1,043 U.S. adults in June 2026, found that many traditional bread buyers also purchase tortillas, wraps, or rolls, a trend particularly driven by parents seeking variety. Consumers are often making health-related associations before even reading labels, with a majority linking visible grains and seeds to better health and sourdough to improved gut health.
A generational divide is also reshaping the bread category. A substantial portion of Millennials perceive traditional sliced bread as "boring" and are actively seeking new everyday staples, while Gen Z shows a preference for sourdough as a future pantry staple. Sourdough has experienced the strongest net consumption gain over the past year and is now the leading choice for the "ideal sandwich."
The research identified four distinct consumer personas: the Traditional Loyalist, the Artisan Advocate, the Better-For-You Optimizer, and the Alternative Explorer, each with unique motivations for purchasing bread. Erin Ball, Executive Director of the Grain Foods Foundation, emphasized the importance of this science-based research for the industry to understand and adapt to evolving consumer demands.
