Anton Paar GmbH has launched the GlutoPeak, a rapid rheological testing device aimed at transforming flour and gluten quality analysis in the grain milling and processing industries. The device offers faster, more reproducible results compared to traditional methods like the Farinograph, Extensograph, and Alveograph, delivering insights in under five minutes with minimal sample size. The GlutoPeak works by subjecting a sample to high shear at a constant temperature of 36°C, measuring the torque generated as gluten forms and disintegrates. Strong gluten produces rapid, high peaks, while weak gluten results in later, flatter peaks or no peaks at all. The latest advancement, the Rapid Flour Check evaluation, automatically correlates these findings to established chemical and rheological parameters such as protein content, wet gluten, Farinograph water absorption, and Alveograph W-value. This real-time feedback is valuable for millers, grain traders, breeders, bakers, and researchers. The system has also been adapted for vital wheat gluten with the new Rapid Gluten Check protocol, which assesses dry gluten quality using just 2.10 grams of gluten and distilled water.
