United Airlines is elevating its in-flight dining experience for passengers in the Polaris business class cabin on select long-haul international routes. The airline has partnered with 11 acclaimed chefs from four continents, inspired by Netflix's "Chef's Table" series, to develop a new range of multi-course menus.
The initiative, described by United as the start of a "new era of in-flight dining," will feature 30 new dishes, including appetizers, salads, and main courses, reflecting diverse culinary traditions from global food cities. These chef-curated menus will be available from August 1 through September.
Chefs like Tomos Parry from London, Tashi Gyamsto from Tokyo, and Manu Buffara from São Paulo are contributing their expertise. For example, passengers departing from London can sample Parry's grilled beef fillet or slow-roasted lamb, while those leaving Tokyo might enjoy Gyamsto's miso-marinated sea bass. In São Paulo, Buffara offers Brazilian specialties such as shrimp stew.
US-based chefs are also featured, with Fariyal Abdullahi offering Ethiopian-inspired dishes from Newark and Penelope Wong presenting items like smoked trout shokupan bread from Denver. Other participating chefs and their respective cities include Nancy Silverton (Los Angeles), Jenner Tomaska (Chicago), Justin Yu (Houston), and a collaboration between Isabel Coss and Matt Conroy (Washington D.C.), and David Barzelay (San Francisco).
Beyond the culinary offerings, the collaboration includes exclusive branded content providing insights into the chefs' stories and creative processes. United plans to introduce a new lineup of dishes from these chefs in October, with seasonal rotations continuing through 2027.
