Fairmont Hotels & Resorts has officially opened its latest luxury property, Fairmont Cheshire, The Mere, located in northwest England. This marks the brand's fourth hotel in the UK, joining The Savoy, Fairmont Windsor Park, and Fairmont St Andrews in its portfolio.
The new resort is set within 157 acres of Cheshire countryside, offering scenic views over The Mere lake. It comprises 116 rooms and suites, including 23 suites, designed to provide a luxury countryside experience.
Dining at the resort is highlighted by 'Gordon Ramsay at The Mere,' a restaurant featuring a British-inspired menu. Additional dining venues include The Orangery, which transitions from afternoon tea to a champagne and oyster bar, and The Club Lounge offering globally inspired and Indian-influenced dishes. A speakeasy-style bar also serves premium drinks and cocktails.
For leisure, guests can utilize the Fairmont Spa, housed in a restored Victorian stable block. The spa facilities include a 20-meter swimming pool, Finnish barrel sauna, ice baths, hammam steam rooms, and salt inhalation chambers, alongside 20 bookable treatments. A Technogym and a covered outdoor class studio are also available for fitness.
Golf enthusiasts can play on the resort's 18-hole championship parkland golf course, originally designed in the 1930s by James Braid and George Duncan. The course is set against the backdrop of the Cheshire countryside and The Mere lake.
Previously known as The Mere Golf Resort & Spa, the property underwent a £125 million (€146.7 million) developer-led transformation to become the five-star Fairmont resort. The location offers convenient access, being approximately 30 minutes by road from Manchester and under an hour from the Peak District.
